This is a quick and easy dish with that somewhat comfort feel.
Ingredients for 4
- 150g Blue cheese. Danish blue is perfect for this as a relatively cheap cheese but use your favourite if you wish to push the boat out.
- 200ml Double cream
- 100ml Dry white wine
- 2 TSP Garlic finely grated
- 1 Large white onion finely diced
- 4 Chicken legs or Chicken breasts with skin on as you prefer
- 4 TBSP Olive oil
- 2 TBSP Salted butter
- 1 Jalapeno pepper sliced
Roast the chicken until cooked through and golden. Meanwhile melt the butter in the olive oil and simmer the onions with the chilli and garlic until softened. Crumble in the cheese and add the cream and wine. Bring up to a boil then simmer. Optionally puree this or leave as is. Serve over the roasted chicken.
